Method

longer extraction

Time: 28 seconds

Nutty, bitter-dominant, heavy body, and a fuller mouthfeel.

shorter extraction

Time: 19 seconds

More fruit-forward, with notes of caramelised apple, brighter acidity, and a more expressive profile.

Results

The shorter extraction produced a more fruit-forward and expressive espresso compared to the longer extraction, which presented heavier body and more bitterness.

Conclusion

This observation suggests that extraction time alone does not determine espresso quality. While traditional frameworks provide useful starting points, some coffees may express their intended characteristics outside commonly recommended extraction windows.
